The Bivrost Nidavellir is an Arctic Single Malt Whisky from the Aurora Spirit distillery. It marks the second installment in a series inspired by the "nine worlds of Norse mythology". It is distilled three times using a custom copper pot and column still, resulting in a new-make spirit with a 75% alcohol by volume (ABV).
Maturation of Bivrost Nidavellir involves two stages: initial aging in ex-Heaven Hill bourbon casks for 32 months, followed by a 5-6 month finish in ex-Islay whisky casks. These Islay casks have previously aged Pinot Noir at a New Zealand winery and later used for maturing Islay whisky.
The whisky's mash is made from Nordic barley and fermented using glacial meltwater from the Lyngen Alps. Bottled at 46.0% Vol., this whisky has a limited run of 2496 bottles and was released in 2020.
In conclusion, Bivrost Nidavellir's notable aspects include its Arctic origin, unique maturation process, and limited production volume, making it a notable release from the Aurora Spirit distillery.
