The distillery was built in 1895, but you can now see a complex of modern, carefully maintained buildings - Aultmore was completely rebuilt in the 1970s, and there is little left of the old buildings. Since 2008, production has switched to a 7-day operation. There are now 16 malt mashing cycles per week, producing 2.9 million litres of alcohol per year.

Aultmore produced their first official bottling, a 12-year-old, in 2004, after an earlier flora and fauna release, and an earlier rare malts release.
