The Macallan distillery was founded in 1824 and is currently one of Scotland's most famous distilleries. First of all, it is appreciated by the fact that it preserves the traditions of making and ageing the drink more carefully. The most popular line of whisky is one aged in barrels of sherry. Barrels are made in Spain by the distillery’s order and are then sent to Gonzalez Byass for several years for Oloroso sherry ageing.

The Macallan distillery remains one of the few distilleries that still use Golden Promise barley. This variety used to be the main one for production of whisky in Scotland. Unfortunately, its share in Macallan continues to fall. However, the majority of other distilleries have completely switched to cheaper and more productive varieties. Another feature is that two types of yeast are used here, while most competitors use only one. Nonetheless, the days when Macallan was made one hundred percent from Golden Promise using five types of yeast seem to have ended in the mid-90s. These old releases are of maximum interest to collectors and it is the ones which set new price records at online auctions.
